What Can Be Substituted for Ground Veal in Bolognese?

While veal provides a classic component in Bolognese sauce that adds mild and sweet flavors, you can easily substitute other ground meats without changing the essential nature of your pasta dish. In fact, outside of the Bologna region of Northern Italy where Bolognese sauce originated, Italians regularly change the proportions of the veal, other meat and other ingredients in their sauces. Although your sauce won't be classic Bolognese without ground veal, it will still be delicious.

The Value of Veal

Whatever meat you substitute for veal should share some of its qualities, such as a mild and delicate texture and flavor. Prior to the 1990s, veal calves were raised in extremely confined areas and their meat was bland to some palates. Since then, growers allow the calves more space and many of the animals are grass-fed as well. The meat from these calves has a light beef taste but is still very tender.

Ground Pork, Chicken or Turkey

Ground pork, chicken or turkey are all mild-tasting and tender meats that you can substitute for ground veal. With any of these meats, drain off excess fats before using the meat in your Bolognese recipe so the sauce isn't overly fatty. Because much of the pork in the U.S. is lean and comes from young hogs that are six to seven months old, ground pork bears a close resemblance to ground veal.

Getting Your Proportions Right

A classic pasta Bolognese sauce for eight to 10 people contains about 3 ounces of meat per person, along with an onion, carrot and celery rib cooked in olive oil, a large can of diced tomatoes and about 2 cups of liquid, which might be equal parts chicken stock and white wine. One option for substituting veal includes using equal parts ground beef and ground pork with a smaller amount of ground chicken or turkey. Or, simply use half ground beef and half ground pork.

Highlighting Alternative Ingredients

Instead of finding a substitute meat for ground veal, you can copy the sauce popular in the south of Italy, where Sicilians add more tomatoes to their ragu sauces and less meat overall. They also add pork sausage which gives the sauce lots of flavor with a small amount of meat. In the Emilia-Romagna area of Northern Italy, which includes Bologna, milk and cream are added to the sauce, which will give your sauce richness even if you leave out the veal, and rely on ground beef alone.

Hanukkah Jelly Shots

How to Brew Manioc Beer

Things You\’ll Need

  • "Sweet" manioc

  • Water

  • Paring knife or vegetable peeler

  • Colander or strainer

  • Large cooking pot with lid

Manioc beer, also known as cauim or chicha, is a traditional beverage made and enjoyed by indigenous people of South America for a millennia. Manioc, which you might know as yucca or cassava, is a shrub that has dense, starchy roots that are consumed as a dietary staple by people around the world. While raw manioc can be toxic, when properly prepared it can be a nutritious, versatile ingredient in a variety of foods and beverages. The ancient chew-and-spit recipe for manioc beer might seem odd to modern home brewers, but it offers the best and most traditional way to make this tasty, exotic drink.

Step 1

Peel and slice manioc. Use a paring knife or vegetable peeler to remove the skin of the manioc roots. Slice the peeled manioc into thin discs or bite-size chunks.

Step 2

Boil manioc. Place the manioc pieces into a large cooking pot. Add enough water to fill the pot nearly to the top and then bring the water to a boil. Boil until the manioc is tender, which can take an hour or more.

Step 3

Chew manioc. Remove the water by pouring the manioc into a colander or strainer. Allow the manioc to cool, and then place each piece in your mouth (one at a time), chew it thoroughly and spit it back into the empty cooking pot. This helps to soften the manioc further and allow digestive enzymes in your saliva to begin converting the manioc starches into sugars, which are critical for the fermentation process.

Step 4

Reheat manioc. After you have chewed and spit all of the manioc back into the pot, add fresh water. Your water level should be about three times as high as the manioc layer. Mix the manioc and water well and then cook at a medium-high heat (a little below boiling), stirring occasionally, for one hour.

Step 5

Let the manioc ferment. Remove the manioc mixture form the heat and allow it to cool. Place a lid on the cooking pot and store it in a place where it can rest undisturbed for several days.

Step 6

Enjoy manioc beer. After four to five days, your manioc beer should be adequately fermented. Remove the pot lid, pour yourself a glass and enjoy.

Tip

Chicha, cauim and related traditional beverages (both alcoholic and non-alcoholic) can also be made with corn and other ingredients.

To avoid the manioc sediment that settles at the bottom of the pot during fermentation, you might want to pour your beer through a strainer before drinking it.

Warning

Manioc roots and leaves contain toxic chemicals and should never be eaten raw. Use only "sweet" manioc, which is generally safe once it is thoroughly boiled or cooked.

If you have food sensitivities or other health concerns, be sure to consult a physician or nutritionist before preparing or consuming manioc or manioc beer.

  • 2 tablespoon olive oil

  • 3 cups brown rice or quinoa, cooked

Light Sriracha Turkey Meatballs Recipe

Over the years of developing recipes I've learned that just because a recipe is low carb, low fat, dairy free, and comes with a gluten free option, doesn't mean it can't be delicious and filling. It just takes a few tricks, one of which is sriracha. For a sauce with hardly any calories, it packs a big bag of flavors. Sautéing the meatballs will give them a little sear (more flavor!) and simmering them in a rich sauce gives you all the flavor you want and still helps you stick to your diet. It's a win/win.

Stock up on fruit juices, which are the base for many mocktails. Orange juice, lime juice or cranberry juice are great ways to start out a refreshing mocktail. Tropical mocktails are delicious with blended juice drinks such as peach-cranberry, or for more exotic drinks, try blends such as banana-mango. For a mocktail with real zing, try some lemonade or grapefruit juice.
