Difference Between Buttermilk & Cultured Buttermilk

Cultured buttermilk adds a distinctive tang to baked goods, pancakes and meat marinades while also keeping food tender. You can find cultured buttermilk in the dairy section of any grocery store; it differs from old-fashioned buttermilk, a byproduct of the butter-making process. The two cannot be used interchangeably.

Cultured Buttermilk

To produce cultured buttermilk, low-fat or non-fat milk must be acidified with bacteria cultures similar to those found in cream during the butter-making process. The taste of cultured buttermilk differs from traditional buttermilk, however. The sour liquid resembles yogurt, with a thicker texture than traditional buttermilk. It is used primarily for cooking rather than drinking.

Old-Fashioned Buttermilk

Old-fashioned buttermilk occurs during the process used to transform cream into butter. The slightly acidic taste comes from bacteria naturally present in the cream, which is allowed to sour slightly. Old-fashioned buttermilk was most commonly added to recipes as a way to boost nutrition. Traditional buttermilk is not available for sale in grocery stores in the United States, but you might find it through specialty dairy producers. It has a rich, buttery taste and only a gently acidic tang. The thin liquid contains almost no fat, as it is removed during the butter-making process.

Substituting and Options

Because of their significant differences in taste and texture, old-fashioned and cultured buttermilk cannot be substituted for one another. In a recipe calling for old-fashioned buttermilk, you can substitute water with a small amount of lemon juice. Replace cultured buttermilk with thinned sour cream or yogurt. Mix water into the sour cream or plain yogurt to achieve the right consistency and use it as you would buttermilk.

Make Buttermilk at Home

Make cultured buttermilk at home using either a buttermilk starter or leftover buttermilk. Use a 16-to-1 ratio of buttermilk to low-fat or non-fat milk. Mix the buttermilk and milk together and store the liquid in a glass jar. Cover the jar with a coffee filter or cheese cloth to keep out debris and dust, but do not seal it with a lid. Leave the jar at room temperature, between 70 to 78 degrees Fahrenheit, and let it sit for 10 to 24 hours. When the milk moves away from the sides of the jar as a single mass, the buttermilk is ready. Seal the jar tightly and store it in the refrigerator for six hours. Stir the cultured buttermilk before using it.

Make It Egg-Cellent – in partnership with Eggland's Best, we asked our favorite chefs to take a breakfast, lunch, or dinner staple and make it better by adding EB eggs to it, and ended up with a few exclusive and delicious recipes that you can make at home.

This delicious summertime sandwich draws on some southern influences, with a few twists, like the delicious runny fried egg and chile aioli which adds a nice flavor kick! I will be serving this sandwich at my brunch restaurant, Lately, now open in downtown Los Angeles.

This recipe is inspired by my love for pimento cheese, and memories of growing up eating fried green tomatoes. The egg is the 'icing on the cake' so to speak. Who doesn't love a perfectly sunny side up egg anyway?

Eggland's Best eggs are great for this recipe because they only have 60 calories and pack in more of the nutrition you need to get through your day, such as 6x more vitamin D and 10x more vitamin E compared to ordinary eggs.

Cooking time: 40 minutes

Yield: 4 sandwiches

Things You\’ll Need

  • 2 medium/large green tomatoes

  • 1/2 C AP flour


  • 6 Eggland’s Best large eggs, separated

  • 1 C panko breadcrumbs

  • 4 C canola oil, for frying


  • 8 leaves of butter lettuce

  • 8 slices thick-cut white bread, sometimes called ‘Texas Toast’

  • Scant 1/2 cup pimento cheese spread, house-made or store bought

For Aioli:

  • 1/2 C mayonnaise


  • 2 cloves garlic, finely grated

  • 2 T lemon juice

  • 2 T Calabrian chile paste (available at Italian markets or online)

  • 4 T butter, at room temperature, for buns and frying eggs

  • Salt to taste

Slice tomatoes into 1/2" thick slices.

Set up your breading station by placing flour and bread crumbs in separate bowls, and season with a large pinch of salt.

Crack 2 Eggland's Best eggs into another bowl, and scramble with a fork.

Bread tomato slices by dipping each one first into the flour, shaking to remove excess, then dipping in eggs, and finally the breadcrumbs. Place finished breaded tomatoes on a rack.

Meanwhile, heat frying oil to 350 ̊ F. Once oil is hot, fry tomatoes each side until golden brown all over. Set on a rack to cool slightly, and season liberally with salt.

Heat a large skillet over medium heat. Spread bread with butter on one side.

Brown the bread in the skillet until golden brown. Watch them closely, so not to burn!

Step 8

Remove bread and wipe skillet clean, then add more butter to fry Eggland's Best eggs. Fry two eggs at a time, as not to overcrowd pan. Cook the eggs for 4-5 minutes each, until white is set but yolks are still runny. Remove cooked eggs and set aside, then fry the other eggs.

Make aioli by mixing all ingredients together and season with salt. Spread aioli on both sides of bread.

Step 10

Place a fried tomato on the bottom slice of bread. Spread a generous amount of pimento cheese atop each fried tomato, top with 2 lettuce leaves and place the Eggland's Best fried egg atop that.

Step 11

Season the egg yolk with a pinch of salt, and serve with the top bun tilted against the sandwich to show off that beautiful fried egg. Enjoy!

Ahhh, a delicious cold one, by the gallon. Just right for a large group, or one seriously misguided overachiever. Know the basics and you'll be all set for the big event. Keep the keg on ice so it stays cool and it will be your best party buddy, maybe you can even practice some keg stands for old times sake.

Step 1

Locate a liquor store, beer store or brewery in your area that sells kegs, and find out what's available. Do this one week in advance, in case they need to special order.

Step 2

Decide how much beer you need. A pony (half) keg is 7.5 gallons and serves 27 people three 12-ounce servings each, and a full-size keg is 15.5 gallons and serves 55 people three 12-oz. servings each.

Step 3

Choose between the less-expensive hand pump or the Cadillac-grade carbon dioxide pump.

Step 4

Bring your driver's license, a credit card and a deposit to pay for the keg. You'll get your deposit back as long as you return the tank and tap.

Step 5

Get your keg home. Some stores deliver; otherwise, get some heavy-lifters to help you hoist it to the party.

Tip

For a nominal fee or deposit, the store that sold you the keg may loan you a plastic tub to chill the beer. Ask them to throw in plastic cups, too.

When to Put Sprinkles on Cookies When Baking

Although they may be chocolate flavored, hot pink or every color of the rainbow, one thing that's certain is that adding sprinkles to cookies will give the treat a burst of flavor and fun. There are several methods for adding sprinkles to cookies. Some require you to place the sprinkles on the cookies before baking or, if you prefer, you can also add sprinkles after baking. Whatever method you choose, using sprinkles on your cookies is a colorful way to brighten your snack.

Step 1

Use the cookie cutter as a guide and add sprinkles before baking the cookie. Place your cookie shapes on a cookie sheet. Place the cookie cutter over the cookie and pour the sprinkles inside the cutter. Use your finger to lightly press the sprinkles into the cookie dough, then remove the cutter. Bake according to recipe instructions.

Use milk to place sprinkles on the cookie before baking. Place your cookie shapes on a cookie sheet. Use a pastry brush to spread a small amount of milk across the cookie dough, then add sprinkles to the cookie before baking. You can add sprinkles randomly, or you can create a pattern. The milk helps the sprinkles stick to the cookie dough. Bake cookies according to recipe instructions.

Step 3

Roll the sprinkles into the dough before baking. Roll the cookie dough on a piece of waxed paper. Add the sprinkles to the top of the dough, then use the rolling pin to press the sprinkles in the dough. Cut cookies as usual and bake according to recipe instructions.

Step 4

Use frosting to add the sprinkles after baking. Remove your cookies from the oven and allow them to cool well, then add a favorite frosting flavor. Add the sprinkles to the top of the frosting and use the back of a spoon to press them lightly into the frosting.

  • 2 1/2 cups low-sodium chicken broth

  • 2 large eggs

  • 1 tablespoon chopped fresh rosemary

If cooking ahead of time, allow to cool completely. Replace foil over the top and store in the refrigerator. Reheat at 250 degrees F, covered, for about 35 minutes. Add 1/4 cup extra stock if the stuffing starts to dry out.

Finish by sprinkling cheese on top.

Step 5: Bake

Cover and bake at 400 degrees F for 20 minutes.

Remove cover and continue baking for an additional 15 minutes, until the cheese is golden on the edges and bubbling everywhere.

Wait 5 minutes to serve, allowing the pasta to soak up more liquid and flavor.

Add parsley as garnish if you'd like. Enjoy!

  • 2 tablespoons sesame oil

  • 1 pound ground turkey

  • 2 cloves garlic, minced

  • 3 teaspoons ginger, minced

  • 1 red bell pepper, diced

  • 1 small onion, diced

  • 8 ounces mushrooms, diced

  • 1/4 cup hoisin sauce

  • 4 tablespoons soy sauce

  • 1 cup cooked rice

  • 3 green onions, thinly sliced

  • 1 head butter lettuce

  • Shredded carrots

  • Sliced water chestnuts

  • Cilantro
