Dry cooking sherry has a light, but rich, flavor that pairs well with pork, poultry and seafood. Just a few tablespoons enriches soups, stews and sauces. Dry cooking sherry lasts longer than other types of wine, but it isn't invincible. The better the wine, the faster you should use it, and in most cases, it should be refrigerated after opening. Only cooking wines that contain salt can be stored without refrigeration.

Whether cooking sherry needs refrigeration after opening depends on the type of sherry. Sherry labeled for cooking typically contains salt and is shelf-stable, requiring no refrigeration. Inexpensive dry sherry that is suitable for drinking can also be used in cooking. These wines contain no salt and should be refrigerated after opening.

Shelf Life

Sherry is an enriched wine, which increases its longevity. Still, once opened, the flavor quickly dissipates. An unopened bottle of sherry stored in a dark, cool place will stay fresh for 12 months. Once opened, cork the bottle tightly and store it in the refrigerator for one to three weeks, but no longer than a month. Store cooking sherry in a dry, cool pantry and use it by the "best used by" date on the bottle, typically within a few months.

Choosing a Sherry

Although you can use cooking wine in your dish, you're probably better off with an inexpensive regular sherry instead. Cooking wines are usually made from thin, poor wine stock and have a lot of salt, as much as 1 teaspoon per cup. It's easy to add too much salt when using these types of wines. You can buy a suitable sherry for just a few dollars, which will add flavor and richness to your dish without the worry of over-salting it.

When to Toss It

Whether you store sherry in the refrigerator or the pantry, smell and taste it before you use it. As sherry ages, it can develop a bitter or sour flavor, almost like vinegar. Butter beans are mature lima beans. They are flat and white, and taste creamy, rich and buttery when cooked. Whether dried, fresh or frozen, butter beans require a long cooking period to soften and absorb delicious seasonings. A slow-cooker ensures that the beans cook at a low temperature, which helps them stay intact.

Dried butter beans require soaking before they can be cooked. Soak beans for at least five hours in cool water. The warmer the water, the shorter the soaking time. Beans soaked in boiling water may be ready for cooking in as little as two hours. Longer soaks produce beans with a creamier texture, however, so an overnight soak or a maximum of 24 hours is ideal. As they soak, beans release a difficult-to-digest sugar, which can cause gas when consumed, so do not reuse the soaking liquid for cooking.

  • 1/2 cup (1 stick) unsalted butter, room temperature

  • 1/2 cup light brown sugar

  • 1/4 cup white sugar

  • 1 1/2 cups all-purpose flour

  • 1/4 teaspoon salt

  • 3 tablespoons milk of choice

  • 2 teaspoons vanilla extract

  • 1/2 to 3/4 cup chocolate chips

Step 1

Preheat the oven to 350°F. Using a spatula, spread the flour on a large baking sheet.

Bake for 6 to 7 minutes, gently tossing halfway. (Heating the flour will kill bacteria and make the final cookie dough edible.) Let cool completely.

Tip

To be extra safe, use a candy thermometer to check the flour's internal temperature. It should reach at least 160°F to ensure harmful bacteria is destroyed.

Slice the softened butter and add to a large bowl. Add the light brown sugar.

Eventually, the mixture will become too thick for the mixer. Use a spatula (or clean hands) to finish mixing the cookie dough. Make sure the flour is fully incorporated.

Tip

If it's a hot day, chill the cookie dough for a few minutes before folding in the chocolate chips. Otherwise, the chocolate chips might start melting as you fold them in. Try not to overmix, too.

Before serving, press in a few more chocolate chips—because who can say no to more chocolate?! Refrigerate any leftovers in an air-tight container for up to one week. You can also freeze leftover dough for about three months.

How to Julienne Beets

Julienned beets cook evenly because the pieces are all approximately the same size. A tumble of julienned beets is attractive and seems more festive than plain beet slices. Combine cooked beets with other julienned vegetables such as carrots and cucumbers for a fresh salad. Alternatively, add raw julienned beets to your wok as part of a stir-fry. They add an earthiness and sweetness to the dish, and the matchstick-size pieces cook as quickly as the other vegetables.

Raw Beets With a Knife

Step 1

Scrub the beets until the dirt and debris are removed from the surface. Cut off the tops and about 1/4 to 1/2 inch of the beet. Save the tops; they're edible and taste like a sweeter version of spinach. The red veins in the green leaves and stems stay red when cooked.

Step 2

Cut off the roots and about 1/4 to 1/2 inch of the beet at the bottom. The flat ends make the beet easier to cut into matchstick-size pieces because it doesn't roll around.

Step 3

Peel the skin off the beet with a sharp knife or a vegetable peeler.

Step 4

Place the beet root side down on a cutting board. Hold the beet with your nondominant hand. Hold the knife in your dominate hand. Cut slices off each side of the beet to form a square shape. Starting from the end of the beet farthest from your dominant hand, cut the beet into vertical slices no more than 1/8 to 1/4 inch thick.

Pile the beet slices in the same order you cut them on the cutting board. Think of it as reassembling the square beet. Cut the piled slices into thin strips no more than 1/8 to 1/4 inch thick.

Egg Slicer Method

Step 1

Use the tool that slices a whole hardboiled egg to julienne a cooked beet. Prepare the beet by removing the top, root and peel. The beet should be cooked to tenderness; otherwise, the blades won't go through the beet.

Step 2

Place the beet root side down on the open egg slicer. Most slicers have a base the egg sits on and a series of blades on a hinged top. When you pull the hinged top down over the egg, the blades slice through the egg. It does the same thing with a cooked or canned whole beet.

Step 3

Gather up the slices to reassemble the beet. Put them back in the egg slicer, but give the beet a 90-degree turn so the hinged top cuts the slices into strips.

Tip

Cooked and canned beets may be julienned with a knife, just like raw beets, instead of an egg slicer.

Warning

Use a sharp knife when cutting raw beets; a dull one makes the job more difficult and increases the risk of cutting yourself.

Things You\’ll Need

  • 1 sleeve (9 full sized) chocolate graham crackers

  • 3 tablespoons brown sugar, packed

  • 4 tablespoons melted butter

  • 18 wt oz 60% dark chocolate, divided

  • 1/3 cup brewed coffee

  • 5 cups plus 3 tablespoons heavy cream, divided

  • 3/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • Salt

  • 1/4 cup chocolate sauce

Step 1: Crumble the Graham Crackers

Add the graham crackers and brown sugar to a food processor. Process until just crumbs remain.

Add 8 ounces dark chocolate, 1/3 cup coffee and 3 tablespoons heavy cream to the top of a double boiler set over gently simmering water. Stir until the chocolate is melted and smooth.

Don't like coffee? No problem! Just replace the coffee with cream and you're all set.

Step 5: And to Crust and Chill

Pour into the crust and chill until set.

Melt the remaining 10 ounces chocolate, allow to cool slightly. Add 3 cups heavy cream, 1/4 cup powdered sugar and a pinch of salt to a stand mixer, beat on high until soft peaks form. Slowly add the chocolate, mixing until well combined with the cream.

Chow Mein Basics

Chow mein is a general term for a type of Chinese egg noodles, as well as the dish prepared using them. Make chicken, beef, pork and vegetable chow mein by stir-frying the par-boiled noodles with meats and vegetables until the noodles are slightly crisped, yet still tender. Season with soy sauce, sesame oil, garlic, ginger and black pepper. Include vegetables such as cabbage — the most common addition — as well as carrots, mushrooms or celery.

Freezing Chow Mein

Cook chow mein noodles as usual by par-boiling them until just tender and stir-frying with vegetables and meat before freezing. While some types of noodles are best cooked underdone before freezing, chow mein noodles will stand up well to freezing when prepared in their typical manner. Freeze chow mein in an airtight storage container or freezer-safe zip-top plastic bag. When using a plastic bag, remove as much air as possible from the bag before freezing to ensure quality.

While continuously frozen foods will remain safe indefinitely, freezing chow mein for more three months leads to a decline in quality. Whether you are freezing takeout, leftovers or chow mein made specifically to go in the freezer, be sure to do it within two hours of preparation to prevent the harmful growth of bacteria. When possible, allow chow mein to cool to room temperature before freezing to prevent condensation in the container which can lead to a decline in quality and freezer burn.

Reheating Chow Mein

To prepare frozen chow mein, defrost it overnight in the refrigerator to prevent it from becoming mushy during the heating process. Avoid using the microwave to defrost frozen chow mein, as it can negatively affect the texture of the noodles. Add a small amount of cooking oil to a pan and heat it to medium-high on the stove before tossing in the chow mein, stirring frequently to prevent the noodles from scorching. Reheat thawed chow mein in the microwave for a quick approach. Use full power and add a tablespoon or two of water into the dish with the chow mein to prevent the noodles from drying out. Heat until the chow mein is steaming and registers 165 degrees Fahrenheit on an instant-read thermometer.
